Now Accepting Pre-Orders - MFC Simcoe SMaSH Wort
Pre-orders for MFC Simcoe SMaSH Wort are now being accepted until October 31st! Read on....
Get in on the holiday action, feel the love, have a pint with friends and let me make some great wort for you all at the same time. The timing of this wort release is designed for your finished beer to be at its prime for festive holiday drinking.
What it is:
MFC (Merry_Fuckin_Christmas) Simcoe SMaSH Wort will be a full batch of Double Simcoe SMaSH I'll be brewing up at the Hart and Thistle on Friday November 13th, I'll continue with the full boil and hop additions Saturday after an overnight simmer. Then it'll be pumped through our heat exchanger directly into your fermentors @ 68F. Show up at the brewpub with your sanitized, portable fermentor and have a pint at the bar while I fill it for you. Pricing includes 6 oz (each) of Simcoe Hop pellets for dry-hopping at home after fermentation. For those that need yeast I will have at least one strain of liquid slurry available but I'd really like to see you all use your own favorite strain. (Read: Multiple Double Simcoe SMaSH tasting over the holidays!).
This is the easiest and only legal way to get insanely fresh, insanely hoppy and insanely delicious hand-crafted microbrewery wort into your fermentor! The finished beer will be a very hoppy double IPA clocking in at a potential 8.3% ABV and a calculated 250 IBUs.

$60.00 per 23 L wort. Paypal and CC payments accepted below, your name will be added to the list for the Nov 14th 'fill-up'. That's ~ $375 worth of Double Simcoe SMaSH if you were to buy it at the bar. There's no taxes or fees if you ferment it yourself.

SMaSH Release & Dinner Party
I'd like to extend a giant THANK YOU to everyone for coming out for the Double Simcoe SMaSH release, brewers dinner and birthday party on Oct 10th., and especially to those of you whom showed up to taste a quick one and extend birthday wishes even though you had prior engagements for the evening, thank you. A great time was had by all and the food/beer pairings prepared by the Chef were wonderful.

Hurricane Harvest DIPA....
....has sadly SOLD OUT. The tap is dry, it's gonzo, 'das all she wrote until hop harvest 2010. A sad sight it was however we have the new Double Simcoe SMaSH hitting the taps Sat Oct. 10th @ 5:00 pm which will surely ease the pain.

'Double Simcoe SMaSH' Release - Oct 10th

The good folks down at the Hart and Thistle have decided to graciously honour my 29th birthday by offering up some fantastic food and beer pairings! It all happens Saturday Oct 10th from 5:00 pm until close. For those interested I'll be dining in the Dunnottar Room at 6:30 pm and have invited some other local brewers to join me, I would love to have local homebrewers and beer advocates join us for the round table as well. If you can make it down, please do.
Our Two chefs have been busy in a collaboration for this event and will be offering up a two course table d'hote, each course paired with one of our beers. The lovely and talented Chef Colin Stone revealed earlier that we'll be dining on Lamb Osso Bucco paired with Cocoa Hops IBA - more details to follow. Pricing is set at $29.95 per person. I hope to see you there!
Dinner purchase is not required but if you show up you might want to buy a beer or two!

Utilizing the same technique as our previous 37hr Simcoe SMaSH for caramelization and melanoidan formation, the mash-hopped and 1st-wort-hopped wort takes on a deep tawny colour with a depth of flavour and well integrated bitterness during the long simmer. Come on down and try it on for size, it's a big fun beer with a boat-load of hops.
