La Souris (The Mouse) is a hoppy Saison, an old-school farmhouse ale brewed with malted barley, rolled oats and generous amounts of the noble-esque Celeia hop cultivar. It's floral, fruity, spicy and refreshing with a fabulous bouquet.
From the Saison Wiki: Historically, saisons did not share identifiable characteristics to pin them down as a style, but rather were a group of refreshing summer ales. Each farm brewer would make his own distinctive version.And so it is, our distinctive version hits the taps today August 18th 2010 at high noon.

Hop Rate – 1.5 lbs/bbl
ABV - 5.6 %
Hops - Celeia
Colour – 5.0 SRM
Malts - Pale Ale, Crystal 15
Adjuncts - Rolled Oats
Slovenian Celeia Hops
Usage: Aroma/Dual
Description: Celeia is dual pupose hybrid beetwen Savinjski Golding, Aurora and Slovenian wild hops. It has a noble and pleasant hoppy aroma similar to Saaz. Low cohumulone (25%) makes for smooth bittering qualities.
Typical Beer Styles: Light Lagers, Pilsners, Belgian Ales
Possible Substitutions: Saaz, Styrian Goldings
Current Alpha Acid: 2.8%

I would like to take the opportunity to declare this to be the greatest commercial beer ever produced in the history of Nova Scotia.
BTW, La Souris, (the official H&T mascot) made a very brief appearance for good measure last evening.lol

After further sampling, I must crystalize my previous assessment.
La Souris is the perfect intersection of what a true saison should be - dry, harsh, and fruity. In a word, perfection. Well done, very well done. Save that recipe.:)

I'm pretty sure La Souris will still be on but chances of there being any Kneecapper left are very very slim. I might be able to set aside a bottle for 'testing' purposes if you can't make it down.
