90 Degree IPA

Born on December 24th 2010

On Christmas Eve day, December 24th 2010 we have our latest hop sandwich '90 Degree IPA' on tap at the pub. It's big and bold, it's aromatic and bitter, it's orange and sticky but best of all it's hoppy as balls just the way we like 'em!

IBUs ~ 84
Hop Rate – 6 lbs/bbl

Hops - Simcoe, Cascade, Citra, Cluster, Columbus

It'sa Hoppy Tuesday

Well it's Hoppy Tuesday again folks! At the taps this week we've pulled out an aged keg of our Orange Sunshine and it's tasting fabulous. For those that haven't had it, it's a Saison, a French style farmhouse ale brewed with the Citra hop cultivar and Curacao orange peel.

We also have our new India Black Ale - Ink'd on tap tonight so come on down.

Ink'd - IBA

Born on Dec 4th 2010

Our latest beer to hit the taps at the brewpub is Ink'd - an India Black Ale - or for those that prefer the Black IPA designation, here it is, the Maritimes first real Black IPA. It's hoppy as all get-out with a big ol' malt backbone keeping it nicely balanced, there are some interesting caramel and mocha-like notes hinting of its darkside.

Gravity - 16.5P/1.068
IBUs ~ 56
Hop Rate – 4.6 lbs/bbl
ABV - 7.4 %

Hops - Simcoe, Chinook, Citra, Sorachi Ace, Columbus, Centennial
Colour ~ 28 SRM
Malts - Pale Ale, Crystal 30, Crystal 75, Carafa Special III, Melanoidin



Style Guidelines:
"American-style India Black Ale has medium high to high hop bitterness, flavor and aroma with medium-high alcohol content, balanced with a medium body. The style is further characterized by a moderate degree of caramel malt character and medium to strong dark roasted malt flavor and aroma. High astringency and high degree of burnt roast malt character should be absent. Fruity, floral and herbal character from hops of all origins may contribute to aroma and flavor.

Specifications:
Original Gravity = 1.056 - 1.075 (14-18.2 ºPlato)
Final Gravity = 1.012 - 1.018 (3-4.5 ºPlato)
Alcohol by Volume = 6 -7.5%
Color = 25+ SRM
Bitterness = 50 - 70 IBUs"
